Stone oven-cooked spring lamb smoked with cherry wood
This cherry blossom-themed meat dish is available as part of our dinner course menu. Features tender and juicy lamb raised on the most nutritious spring and early summer pastures in New Zealand. The spring lamb is smoked with cherry wood chips and cooked in a 400°C (750°F) stone oven, infusing it with a subtle cherry blossom aroma while sealing in the umami flavor.

Spring Mirror
This cherry blossom-colored cocktail evokes the experience of sake enjoyed during cherry blossom viewing (hanami), combining cherry blossom and plum liqueur with non-alcoholic sparkling drink for a refreshing ftertaste.

Bloody navel
This non-alcoholic cocktail uses blood orange juice and features a spicy, floral taste combining seasonal Italian blood oranges with Japanese cherry blossoms.

Sakura marinade
A cocktail that draws inspiration from pickled cherry blossoms (sakura-zuke), a Japanese spring and celebratory garnish. Based on Japanese craft vodka HAKU, it blends cherry blossoms and spring’s pink grapefruit with apple vinegar adding a refreshing accent.

A cocktail that combines spirits derived from spring flowers, blending plum, peach, and lemon juice with elderflower liqueur and Japanese craft gin ROKU, including cherry blossoms and bark, which creates a gentle taste reminiscent of the end of the cold season. A white chocolate cherry blossom design at the bottom of the glass conveys a delicate spring atmosphere.
